Adventures in Meal Prepping for a Picky Client: Tofu Butter Chicken, Sweet Treats, and Appetizer Fiascos

As a private chef, I like to try and meal prep things for the week,
but the only problem is
that my client refuses to eat the same meal more than like
two days in a row. And so this is meal prepping for two days,
not a week. Because if I did it for a week,
then she literally won’t eat it.
My client has been obsessed with Indian food lately,
and so she demanded that I make her this butter chicken,
except she’s afraid of chicken,
so instead I made it with tofu.
And I feel like my clients gonna start her period any day now
because she’s constantly been craving sweet treats lately,
and so of course I had to make her something sweet.
I made her a chocolate and peanut butter banana bar.
I topped it with some peanut butter, peanuts,
melted chocolate, and then I froze.
Is it? My client doesn’t like it
when every single thing that I make for her is like
a full meal, and so I decided to make her two little
small appetizers that she can eat throughout the week,
even though these are probably literally going to last maybe 48 hours.
The first one was a crispy herb potato salad.
And like every other person on the internet,
my client has been obsessed with cucumbers lately.
This is the best way to do it.
I don’t really know why I thought this is last a while
because this was Gone in literally an hour.
And I’m honestly so glad that I spent my entire day meal prepping
just for half this food to literally already be gone.
