Meal Prep Madness: A Graduate Student’s Guide to Becoming a Registered Dietitian

I start grad school tomorrow,
which is literally crazy.
We’re one step closer becoming a registered dietitian.
We prepped a couple things this week.
We did a little bit of ingredient prepping,
and then we also made this buffalo chicken salad.
To have for my lunches this week.
Officially getting into the fall recipes.
I made some pumpkin protein balls,
and then we made this big old thing,
a ground Turkey, so I can make a bunch of different meals with.
I make our pumpkin protein balls. First,
I’m just starting out with a little bit of our oats,
vanilla protein powder.
We’ll add a little bit of our pumpkin spice seasoning,
a little bit of sea salt. Next we’ll just add our pumpkin puree,
add a little bit of our peanut butter,
and we’ll add some maple syrup
and mix this together. And then before we roll them in balls,
I’m gonna add some of this white chocolate chips.
You could also do regular dark chocolate chip.
Place this in the fridge for, like,
10 minutes, and then we’ll roll them into balls.
To store my protein balls in a little containers,
and I will roll these in the ball and then storm away for the week.
I just got this already shredded rotisserie chicken.
You could also just make chicken.
We’re gonna add that to our bowl.
Next, we’re gonna add some of this plain Greek yogurt,
add a little bit of this light Mayo,
some garlic powder, To make it more of that chicken salad type,
we’re gonna add some sliced cucumber.
Just using my little vegetable chopper,
it makes it. It’s easier.
We’ll add some of this chopped celery as well,
a little bit of our chopped onion,
and then finally, we’ll add some buffalo sauce.
Now we just mix all this in,
and then finally, we’ll just prep our ground Turkey.
So I’m just gonna add this to the skillet
so I have protein ready to go and can build my meals off of it.
Just like that, in under an hour,
we are prepped and ready to go for the week.
I’ve said it a million times,
I’ll say it again. Prep your ingredients
because it makes your life so much easier.
