The number one reason that I don’t love to meal prep full meals is that I get tired of eating the same thing every single day. Which is why Crock Pot Salsa Chicken is one of my most frequently made staples to prep at the beginning of the week. It’s simple, healthy, delicious and incredibly versatile, making it easy to enjoy in a different way every single day. I’m gonna show you four different ways that I like to turn this chicken into a meal, all of which use complimentary ingredients. All you need for the chicken itself is chicken breast, bell peppers, salsa, Verde, seasonings and a crock pot, which you can turn into these sheet pan nachos. Another favourite is using it to make chicken tacos. Feel free to get creative with the toppings that you use, depending on your preferences. You can also use it to make a taco salad or taco bowl. Think a chipotle bowl, but better topped with things like cheese, onion, salsa, sour cream, guac, etcetera. And last but not least, these chicken burritos that I like to elevate by cooking on the stove to get crispy on the outside and gooey on the inside.
