Trying Roman Empire food for the first time✨😭 yes, it turns out that the cuisine survived 😊 when the Empire fell 😔 and this low key restaurant in LA is where you can find it they specialize in an ancient dish called pinsa which is the ancestor of pizza it’s believed to be the oldest form of pizza and is made from a special blend of flours & fermented for much longer than pizza giving it a more strong & complex flavor the texture is like biting into a cloud it’s lighter and airier than modern pizza & easier to digest I got three of their pinsas it looks like flatbread but it’s actually very moist and soft like I feel like flatbreads are always super dry this mortadella pinsa was my favorite the special mix of flours also reduces the gluten & glycemic index the pizza dough is even soft enough where they make paninis out of it definitely can’t do that with regular pizza crust this one’s called the Colossio Panini they also have Suppli here which is a Roman street food I’ve never seen this before but it’s like a giant mozz stick combined with risotto? so delicious and they also imported this authentic Italian soda it completed the meal perfectly I think we can all agree The Roman Empire made a lot of mistakes but pinsa isn’t one🫶 I’m about to start thinking of the Roman Empire every day also look at these pizza boxes I’ve never seen them shaped like this😭 give them a try they’re called 📍All Roads Pinseria
