So many people make meal prep way harder than it needs to be. And look, I get it, because it used to be me, too. Packing chicken and broccoli and sweet potatoes for the week. But now we know better. It doesn’t have to be that way. Here’s everything I prepped to make healthy eating easier this week. Starting out with carrot cake, baked oats. I make this one a lot and every time. It feels illegal to have a breakfast this high in protein and fibre, yet tastes like dessert, but without all the sugar. Next, I made these Turkey egg cups. And of course, I snuck some cottage cheese in there, so these are packed with protein and flavour. And honestly, I didn’t know a breakfast food could be this cute. For lunch, I made the Mexican chicken salad that goes viral every time I share it. One of you told me you used it to make quesadillas, and my mind was blown. I will definitely be trying that this week. And you know, we have to have a sweet treat around here. My kids love those made good chocolate granola bars with the chocolate drizzled on top. So I Learned how to make them for a fraction of the price. And that’s what I like to call mom math. No baking involved. You guys are gonna love these.
