Let’s make a lit chicken sandwich. We’re going to start by taking some hammered flat chicken breast, put these into a gallon bag, and then we’re going to marinate them with this lit hot sauce. This lit hot sauce is pineapple, cherry, habanero, also a little bit of jalapeno. Not too hot. It’s the perfect amount of heat. It’s going to be a great marinade for these chicken sandwiches. We’re going to make these chicken sandwiches with some roasted peppers. So we’re going to de-gut these, cut the tops off, pull the guts out, and then we’ll just roast them in half. They don’t have to be perfect because we’re going to cut them up later. That should be good. We’re also going to roast the pineapple. We’re going to make this pineapple habanero hot sauce with a little bit of sweet. So we’re going to roast this pineapple on the Roto Q360. Cut the top off. Don’t cut the bottom. You can leave that on. OK. We’ve got our pineapple all cleaned up. Left the butt on. We’re going to stab this Roto Q. Skewer through it. Line up your Roto Q. This is self-contained. No batteries, no electricity. We have this pineapple seasoned with spare sprinkles onto our Z-Grill pellet smoker, onto the Roto Q360. We’re going to let that roll 30 minutes on 350 degrees. It’s been about 30 minutes. We’re going to go ahead and season up our chicken breasts. They’ve been in the refrigerator. We’re going to season these chicken breasts after they’re marinated with a lit hot sauce. We’re going to season them with this is it. 350 degrees onto the Z-Grill. Got all our ingredients off. We’re going to cut up this pineapple. We’re going to cut out the core just a little bit, just enough where you can put it on your sandwich, just like that. Going to go in with some of that Chick-fil-A sauce. Pepper Jack cheese on our chicken breast. Hit it with some of these grilled peppers. And then top it with that roasted pineapple.
