DIY Mini Loacker Wafer Ice Cream Sandwiches: A Delicious Summer Treat!

It’s been so hot at school this week,
I knew when I got home I was gonna want an ice cream sandwich.
So I took it one step further
and I use these mini loacker wafers to make a mini ice cream sandwich.
Like I got this big pack of mini Loacker Wafers at Costco.
They’re so crispy, they’re perfect for ice cream sandwiches.
Big bag from Costco, comes with chocolate,
vanilla and hazelnut.
I used two of each wafer flavor to make a mini ice cream sandwich.
I used a different ice cream flavor for each one.
Did the vanilla with a coffee ice cream.
The hazelnut one I used pistachio.
Hazelnut wafers are made with 100% Italian hazelnut.
Chocolate ones are made with sustainably sourced cocoa.
Did a dark chocolate ice cream with the chocolate wafer
and I dipped and drizzled all of them in dark chocolate
and then I popped them in the freezer.
Before I left for school, I snuck a few of them into my lunch bag
because they’re perfect for taking on the go.
Going back to work after having the summer off,
you have to have a little midday treat
followed closely by your afternoon ice cream sandwich snack.
I really don’t know which one of these combinations is my favourite.
The hazelnut wafer with the pistachio ice cream was so good.
So is the vanilla with the coffee.
Feel like that would be a great breakfast option.
